According to tradition, in 1889 the pizza chef Raffaele Esposito created three different pizzas for Queen Margherita of Savoy during her visit to Naples.

The sovereign particularly appreciated the one with tomato, mozzarella and basil, whose colours recalled the Italian flag.

The pizza was then named "Margherita" in her honor.

Although there are documents attesting to the Queen's visit and a letter of thanks to the pizza chef, some historians have raised doubts about the complete veracity of the story.

What is certain is that this story has contributed enormously to the popularity of pizza in Italy and around the world.

The Art of Pizza Making: UNESCO Heritage

In December 2017, UNESCO recognized "The Art of Neapolitan Pizzaiolo" as an intangible cultural heritage of humanity.

This recognition celebrates not only pizza as a product, but the entire artisanal knowledge linked to its preparation: from the processing of the dough to cooking in a wood-fired oven.

The dossier presented to UNESCO describes in detail the traditional gestures of the pizza chef: the rotary movement to roll out the dough, the throwing in the air to oxygenate it, the arrangement of the ingredients with circular movements and the rapid cooking in the dome oven.

These gestures, passed down from generation to generation, represent a cultural heritage that goes far beyond the simple recipe.

In Naples, the cradle of pizza, there is a curious superstition: pizza should never be cut into an odd number of slices.

Tradition has it that the perfect number is 8, a symbol of infinity and prosperity.

The number 8, in the Neapolitan smorfia (the system of dream interpretation linked to the lottery game), represents the Madonna, a figure of great popular devotion.

The Most Expensive Pizza in the World

If pizza was born as a popular and cheap food, today there are decidedly luxurious versions.

The world's most expensive pizza was created by chef Renato Viola for an exclusive event in Salerno. Named "Louis XIII" in honor of the French king, this pizza cost around 8,300 euros.

The ingredients? Three different types of rare caviar, Atlantic Ocean lobster, Cilento red prawns, Himalayan pink salt and organic stone-ground flour.

The whole thing is served with Krug Clos du Mesnil 1995 champagne, Remy Martin Cognac Louis XIII and accompanied by white-gloved service.

Fun fact: to prepare it, the dough needs 72 hours to rise.
